Where to Eat Authentic Pakistani Food in Riyadh
What separates authentic Pakistani cooking from the generic 'Asian' label, and what to order first if you're new to it.
Riyadh has no shortage of restaurants serving something described as Pakistani food. Fewer are cooking it the way it is cooked at home — with spices ground for the day, meat marinated overnight rather than an hour before service, and charcoal instead of a gas grill.
What "authentic" actually means
Authenticity in Pakistani cooking is less about a secret recipe and more about time. A karahi cooked properly takes the better part of half an hour, because the tomato has to break down completely before the oil separates and rises. A biryani cooked properly is layered raw and sealed, so the rice takes on the meat's steam rather than being stirred through a finished curry.
Shortcuts are easy to taste. Rushed karahi is watery. Rushed biryani is uniform in flavour from top to bottom, when it should change with every spoon.
What to order the first time
If you have never eaten Pakistani food before, order across the range rather than one large main. Something from the grill, something with gravy, bread, and rice. That combination is how the food is actually eaten.
Start with achari boti if you want to understand the cuisine's relationship with sourness and heat, or malai boti if you would rather ease into it. Add a half karahi to share, a naan each, and finish with something milk-based to cool everything down.
Eating as a family
Pakistani restaurant food is built for a shared table. Portions are sized to be divided, platters exist precisely so a group can eat across the whole menu, and nobody expects each person to finish their own plate. If you are coming as a family, order fewer mains than there are people and add bread — you will almost certainly have enough.
