About us
Marinate Signature is a family restaurant in An Nasim Ash Sharqi, Riyadh. The name describes the method: marinate properly, and the rest follows.
Our story
Pakistani cooking rewards patience more than technique. A boti that sits in yoghurt and spice overnight tastes different from one marinated for an hour — not slightly, but completely. The acid has time to work through the protein, and the spice ends up inside the meat instead of burning off on the surface.
That single decision shapes how our kitchen runs. Marination starts the day before service. Spices are roasted and ground in the morning. The grill is lit early enough that the coals are settled and even before the first order comes in.
None of it is complicated. It is just slower than the alternative, and we think you can taste the difference.
Our philosophy
Every skewer is grilled over charcoal by someone standing at the fire, turning. Gas is faster. It does not taste the same.
Whole spices are roasted and ground for service rather than bought pre-blended, because ground spice loses its oils within days.
Karahi takes the better part of half an hour because the tomato has to break down properly. We would rather you wait.
Our platters and full karahi portions are sized for a table, not a plate. That is how this food is meant to be eaten.
BBQ, karahi, biryani, curry and Indo-Chinese — enough breadth that a table with different tastes can all eat well.
Heat adjusted on request, high chairs without being asked twice, and staff who will tell you honestly what to order.
Our journey
Marinate Signature grew one section at a time — grill first, then the full kitchen, then a room built around families.
It started with the marinade — the slow, overnight process that gave the restaurant its name and still sets the pace of the kitchen.
A full Pakistani kitchen followed: karahi range, tandoor, and a curry section running from early afternoon to close.
Seating built for families rather than couples — tables that join, space for prams, and a room that stays comfortable when full.
A neighbourhood restaurant in An Nasim Ash Sharqi serving Riyadh's Pakistani community and everyone else who has found us.
Our hospitality
Most of our tables are families, and the dining room is built for that: seating that can be joined, space to move between tables, and a noise level that does not make conversation difficult.
Heat is adjustable on almost every dish — tell us when you order and the kitchen will make a milder version without fuss. If you have not eaten Pakistani food before, ask. Our staff will steer you honestly rather than upsell you.
